Let me get straight to your question. When working with the RadRarialMenu you need to keep in mind that each RadialMenuItem has limited space for its content. You can see the default shape and the size of that space in our Visual Structure article. It is up to you to design the menu of your application in a way that the content of the items will fit in the available space. You have the option to customize the Template of the RadialMenuItemControl representing each item as well as you can apply Margin and Alignments to the visual elements set as Header and IconContent.
Another approach that you can try out is to enlarge the radial menu itself. This will change the available space for each item. You can do this by setting the MinHeight and MinWidth properties of the RadRadialMenu control.
